Chef-owner of Odette, Royer has established Odette as one of the world’s leading restaurants, holding three Michelin stars and consistently ranking among The World’s 50 Best Restaurants. Odette was named Asia’s Best Restaurant by Asia’s 50 Best Restaurants in 2019, cementing its place as a benchmark for contemporary French fine dining.
Prior to opening Odette, Royer trained in some of France’s most influential kitchens, including Michel Bras in Laguiole, where he absorbed a deep respect for terroir and produce, and Le Jardin des Sens under the Pourcel brothers, refining his understanding of balance and modern French expression. He later worked at Jamin, the iconic Paris restaurant of Joël Robuchon, where discipline, precision, and technical exactitude shaped his culinary foundation.
